I've just popped in to tell you about last night's dinner.
We had a really quick and easy vegetarian pasta dish with courgettes, peas, chillies and garlic cream cheese (Boursin), and very tasty it was too if I may say so myself.
Now I’m not a vegetarian but my partner and I do like to try to eat meat free meals at least a couple of times a week. There are a lot of really tasty veggie meals out there, they tend to be cheaper to make and it’s good to cut out the red meat occasionally! But generally I find that you have to plan them so that you have all of the ingredients in.
Give it a try. It’s really very tasty and easily made in 20 minutes.
If you happen not to like garlic, it would work just as easily with a plain cream cheese such as Philadelphia. You would also need to add some seasoning.
Ingredients (serves 2)
Put a table spoon of olive oil in a large frying pan, heat and add the diced courgette. Fry until a pale gold colour and then add the finely sliced red chilli. Add the frozen peas and cook until warmed through. Break up the cheese and add it to the pan, stirring until it is melted.
Meanwhile cook the pasta as per packet instructions. Drain when cooked and reserve a mug of the cooking water. Slowly add some of the water to the sauce, a tablespoon at a time and stir until it is a silky consistency. Stir the drain pasta into the sauce and serve immediately.
